Allergies
and food intolerance |
You cannot pre-empt all customer
allergies but it is your responsibility to ensure that the
food you serve is safe to eat and is of the expected nature,
substance and quality demanded by your customers. Most importantly
that any foods sold must not be misleadingly described by
labels or verbally by staff. To this end always brief staff
as to the ingredients in each dish and ensure that our staff
are aware all potential allergens.
Ask customers to make you aware of their particular
sensitivities when ordering foods.

Known
allergens you should be aware of

- all nuts, especially peanuts and nut oils
- some vegetable oils
- some ready made salad dressings and cold sauces
- sesame seeds
- wheat known as coeliac’s
- dairy products
- seafood and shellfish
- chemical additives, especially colourings
- asthmatic or aspirin sensitives (see below)
Beware of too many E numbers in proprietary foods (see
hit list below). Children, especially infants, should
be given greater regard. |
